While in Borrego Springs with friends I created a new Gin drink that we really enjoyed. Refreshing, pretty and lots of yummy flavor to update this Gin and Tonic. The idea is originally from a drink I head while in Mexico at the Rosewood Hotel. If you are ever in San Miguel de Allende I highly recommend their rooftop bar for the view and the drinks.
- 1 Jigger Gin
- 1 Sprig Rosemary
- 1 Star Anise
- 6 Blueberries
- 1 Large Lemon Peel
- Tonic to top off glass
Muddle the Gin, Rosemary, Star Anise, Blueberry and Lemon Peel together and let sit for at least 15 minutes up to an hour in the refrigerator. If you can’t refrigerate, use the shaker with ice for the muddled ingredients to get a good cold drink.
Mix muddled ingredients with tonic over ice and place a few fresh blueberries, a sprig of rosemary and a fresh lemon peel in the glass.
I usually muddle up enough ingredients for several drinks (cause one is just not enough) and then make drinks to order throughout the evening.
